Motion Dining, located at Brisbane Marriott Hotel, is looking for our next star Commis Chef.  This is a Full-time role however we will still consider Part-time depending on the needs of the applicant. 

We are seeking an experienced culinary creator who is committed to 5 star service.  For this role you will need to be available evenings and weekends, in support of the restaurants operational needs and it’s busy service periods. 

The Place

Motion Dining has post-minimalist design and features a number of dining locations, the elite Chefs Grill table, which overlooks the theatre of the Grill, high set tables located in the stylish M Bar and alfresco dining with amazing river views on M Deck. Serving up savory contemporary cuisine, from locally sourced ingredients, and some of Queensland’s freshest seafood, prime steaks and fine wines.

Brisbane Marriott is perfectly situated in the CBD next to the Brisbane River and the iconic Story Bridge, the hotel’s riverside location is in close proximity to public transport hubs, and a short walk from the Queen Street Mall.

Job Summary:

Supporting our Executive Chef of 20 years and his team of experienced chefs, you will deliver 5 star service to the food and beverage operations of the hotel, including our specialty dining restaurant, Motion.  Successful candidates will demonstrate a genuine passion for food and displaying very high standards of production and presentation.  Afternoon and evenings availability is a must.

  • Brilliant customer centric skills - ensuring all food is prepared and presented in a way that aims to exceed guest expectations
  • Strong communication skills – clear, concise and open – within the team and across other departments
  • Strong organisational skills – ensuring your section is clean and tidy, and runs efficiently and productively
  • Excellent time management – proactively ensuring preparation is done to ensure readiness of current and proceeding shift
  • Great teamwork – you are part of a busy team where collaboration and commitment to excellence is essential
  • Creativity – from problem solving under pressure, to contributing to menu ideas in line with market trends
  • Occupational Health & Safety qualifications/skills in food, chemical, and manual handling
  • You have a working understanding of and the ability to maintain food safety standards

To be successful in this role, you will have:

  • Trade Industry Qualification or completion of Commercial Cookery Qualification
  • Ability to work in a fast pace environment serving up to 300 guests per meal period
  • Ability to effectively work independently and also part of a team
  • You have current working rights within Australia
  • Flexibility with working shift work and weekends
